J.Kings North Fork Culinary Showcase - Wednesday March 13, 2013

Attendees of this year’s North Fork Culinary showcase, held at Grapes and Greens Agricultural Enterprise Terminal in Calverton,

had the opportunity to discover new trends in the industry without having to pick up a trade publication or scour the internet .



This year’s showcase focused on what’s coming up on the local horizon – what are the latest trends and ideas

that foodservice patrons are looking for.
 
 
 
 
Famers’ Market Salad Station

The J.kings culinary team demonstrated how customers could spice up their salad selections with unique flavor combinations and incorporate local produce and products.

Farmer’s Market Turnkey Kit

The J.Kings Marketing and Produce Procument teams brought to the North Fork Food show a Turnkey Farmers’ Market kit that includes all of the items you’d need to set up your own farmers’ market. This kit has everything from the baskets to the checkered tablecloth and even a tent! All you have to do is just add produce.

Independent University

J.Kings Independent University, a series of business building seminars for independent restaurateurs, had representatives at the culinary showcase showing customers ideas for ways they could build their business during slower nights of the week as well as show them how they could use the calendar as a guide to help plan their menus for the month’s ahead.

Restaurant Row Kitchens, Wraps Salads and Home Meal Replacement Items

Guests at the Culinary Showcase discovered the quality chef prepared foods from Restaurant Row Kitchens. They had the opportunity to taste fresh prepared wraps, salads and home meal replacement items that are made with quality ingredients and spices.

A Baker’s Dozen of Ideas:

Instead of just showing new products, this year’s North Fork culinary showcase focused on menu item ideas . Our Culinary Team scoured the marketplace to compile a selection of unique stand out dishes for many segments of the market that could be used to get customers coming back.

Some highlight of those menu ideas were:

Guinness Braised Short Ribs
Short Ribs, slow cooked in Guinness and served with sautéed
lollipop kale sprouts and creamy mashed potatoes.

Buffalo Chicken Potato Skins
Shredded chicken tossed in buffalo sauce, stuffed in potato skins
and topped with blue cheese crumbles. Served with Celery sticks,
carrot sticks and blue cheese dressing.

Jalapeno Chicken Cordon Bleu
Panko breaded chicken stuffed with crumbled bacon, jalapenos,
cream cheese, cheddar cheese and scallions.

Pear and Gorgonzola Pizza
Caramelized onion, sliced pears, and crushed candied walnuts
with crumbled gorgonzola

Grilled Asparagus Salad
Grilled asparagus, mixed greens and poached pears topped with
crumbled blue cheese, candied pecans and dried cranberries.
Served with a rice wine vinaigrette.

Avocado Fries
Breaded avocado wedges fried to a gold brown and served with
cool yogurt lime sauce.


Ceviche Shrimp and Watermelon Salad
Shrimp marinated with lemon, diced onion and cilantro
tossed with watermelon.


Philly Cheesesteak Turnovers
Sauteed onions, serrano chilies, chopped sirloin, sautéed mushrooms,
cayenne pepper and cheese wrapped in a puffed pastry.


Turkey Philly Cheesesteak
Hot turkey, gravy, roasted onions and melted swiss cheese
on a toasted hoagie.


Shrimp and Guacamole Tostadas
Tortillas, tossed in a pan, covered with cheese, grilled marinated shrimp
and chopped cilantro. Dressed with olive oil and lime juice.
