J.Kings South Fork Culinary Showcase - Wednesday May 15, 2013

Attendees of this year’s North Fork Culinary showcase held at B.Smiths in Sag Harbor had the opportunity to discover new trends

in the industry specifically tailored to the summer business on the South Fork.



This year’s showcase focused on what’s coming up on the local horizon –the latest trends and ideas that foodservice patrons

are looking for. All of these were presented by the J.Kings' Culinary Team in action station where guests could fully immerse themselves

by seeing, tasting and experiencing the trends.


 
 
 
 
 
Local Sourcing Menus

With local produce and locally made products so accessible on the east end, the J.Kings Culinary Team showed visitors how they could tap into this wealth of local products as a selling point by creating a locally sourced menu. This type of menu is filled with locally sourced ingredients and includes a map that indicates the locations where local product is sourced. Restaurant Patrons are looking for establishments to buy local. Put yourself above the rest by offering what your customers are looking for.

Restaurant Row Kitchens Home Meal Replacement Items

Guests at the Culinary Showcase discovered the quality chef prepared foods from Restaurant Row Kitchens. They had the opportunity to taste fresh prepared and home meal replacement items that are made with quality ingredients and spices. Attendees of the showcase also had the opportunity to be part of Restaurant Row Kitchens R&D process, sampling and giving feedback on its new flavored chicken meatballs and sliced chicken.

Famers’ Market Salad Station

Farmer’s Market Turnkey Kit

The J.Kings Marketing and Produce Procurement teams brought to the South Fork Culinary Showcase a Turnkey Farmers’ Market kit that includes all of the items needed to set up a farmers’ market at your establishment. This kit has everything from the baskets to the checkered tablecloth and even a tent! All you have to do is just add produce.

Some highlights of those menu ideas were:

Char-Grilled Rib Eye with Roasted Corn & Tomato Salsa
Rib-eye grilled to perfection and topped with roasted corn tomato salsa.

Jalapeno Chicken Cordon Bleu
Panko breaded chicken stuffed with crumbled bacon, jalapenos,
cream cheese, cheddar cheese and scallions.

Blue Cheese Stuffed Burger
8 oz. beef burger split in half, stuffed with blue cheese, topped with
grilled red onion, baby spinach and ranch dressing on a toasted roll.

Pear and Gorgonzola Pizza
Caramelized onion, sliced pears, and crushed candied walnuts
with crumbled gorgonzola

Grilled Asparagus Salad
Grilled asparagus, mixed greens and poached pears topped with
crumbled blue cheese, candied pecans and dried cranberries.
Served with a rice wine vinaigrette.

Avocado Fries
Breaded avocado wedges fried to a gold brown and served with
cool yogurt lime sauce.


Crab Napoleon
Crab cake on a soft buttery puff pastry dressed with wasabi aioli.
